Spring has sprung! Which, for me, means: as much outdoor partying as possible.
Glo.com's cover story today featured me and a group of gals having a terriifc al fresco lunch, the main course of which was a delicious Indian Spinach Salad recipe that my friend Nancy Baker Cahill gave me in a crumpled up Xerox copy a million years ago. When you're having friends for lunch, I think serving one salad - with enough filling ingredients to satisfy - is the easiest and most VGL way to go.
Here's the recipe!
INDIAN SPINACH SALAD
½ cup white wine vinegar
3 T. chopped chutney
1 tsp. dry mustard
2 tsp. curry powder
¼ tsp. hot pepper sauce
2/3 cup oil
½ tsp. salt
3 bunches spinach, washed and trimmed
2 large Delicious apples, sliced thinly
2/3 cup dry roasted peanuts
½ cup golden raisins
½ cup finely sliced green onions
3 T. sesame seeds
[Optional: Roast Chicken slices]
Combine wine vinegar, chutney, mustard, curry powder, hot pepper sauce, oil, and salt. Mix well and chill until ready to serve.
In a salad bowl, combine spinach, apples, peanuts, raisins, green onions, and sesame seeds. Serve and toss with prepared dressing. (Place slices of roasted chicken on top, if using.) Makes 4-6 servings as a side dish and 2-3 servings as a main dish.
